Abstract

This article aims to understand the food adaptation processes of Galician immigrants in Salvador and their descendants. It seeks to understand the Galician identity through recipes, ingredient substitution strategies and their influences on the formation of food taste for generations born in the capital of Bahia. For this, the recipe book of a Galician immigrant established in the Salvador at the beginning of the 20th century will be analyzed. Dorinha's recipe book consists of 152 recipes, divided into four categories: sweets food, savory food, drinks and culinary tips. It demonstrates the food preferences of her family and their adaptation in Salvador.
