O carnivorismo ocidental

Food consumption is one of the most elementary activities of human existence, being its material and symbolic aspects historical marks of cultural differentiations among various ethnic groups and nations around the world. Since globalization has crisscrossed food references, meat has become one of the most desirable consumer goods worldwide and whose eating patterns have been steadily growing, even in regions traditionally known for their vegetarian practices. This change in the global food scenario has been accompanied in the last decades by the diffusion of critical movements that have questioned the cultural and social values ??of the consumption of animal protein throughout the world. This article aims to understand the main cultural aspects that influenced the rise of modern western carnivorism and, from this look, to analyze the most recent discourses that have been confronting the effects of this food practice. In spite of their peculiarities, we observe that these movements are transforming the meat into an important political object and whose disputes are putting in crisis the cultural bases that sustain our carnivorist habits.
