Abstract

This text proposes a dialog on the preparation of couscous as a food that identifies and marks regional food traditions which are now threatened by transgenic advances in agriculture and by the establishment of consumption models through massive distribution of industrialized products that are supposed to replace this traditional food/preparation.The objective is to place the debate within the political field of Sovereignty and Food and Nutrition Security (SFNS), considering as theoretical horizonthe criticism to a hegemonic agriculture and food system, its contradictions and the intrinsic risks to its reproduction.By means of a theoretical essay and starting from the abovementioned issues, we tried to analyze the imbrications between modern food habits and local food culture with its symbolic and ideological effects on food conformation in the contemporary society.The text is divided into four parts: Couscous: historical legacy and gustative identity; What are we eating? Appearances and senses; Between transgenic food risks, uncertainties and advances: what is behind couscous prepared with genetically modified corn; and Sovereignty and Food and Nutrition Security: ways to preserve cultural rights and the Human Right to Adequate Food.This article unveils important issues that affect all Brazilians in the current scenario of power, influence and control of large conglomerates of transnational food companies that have their profit potential on farmers’ families, consumers and public authorities based on transgenics.In addition to health and environmental risks, many other issues are at stake. Political, social and economic insecurity also jeopardizes sovereignty and food and nutritional security in Brazil.

Rubia Carla Giordani Formighieri, PPGS/UFPR

He holds a master's and doctorate in Sociology from UFPR and a thesis on the Laboratoire d'ethnologie et de sociologie comparative, Université Paris Ouest Nanterre. She is a professor in the Public Health area of the Department of Nutrition and collaborator in the Postgraduate Program in Sociology at the Federal University of Paraná. In addition to teaching, she works in this institution as researcher of the research groups in Health Sociology and the research group moNGARU.

Islandia Bezerra Bezerra, Dnut/UFPR

Mulher, Potiguara, Ativista, Professora, Extensionista e Pesquisadora. Mãe de Manuela e Janaina. Vinculada ao Departamento de Nutrição da UFPR e ao Programa de Pós-Graduação em Sociologia/PGSOCIO da mesma Universidade. Atua como Educadora voluntária na Escola Latino Americana de Agroecologia/ELAA. Possui especialização em Saúde Coletiva. Mestrado e Doutorado em Ciências Sociais/PPGCS-UFRN. Pós-doutorado em Ciências e Desenvolvimento Regional na Universidade Autónoma de Chapingo/UACh - México. É Membro do Fórum Estadual de Soberania e Segurança Alimentar e Nutricional do Paraná/FESSAN/PR e Vice-Presidenta da Associação Brasileira de Agroecologia (ABA).

Soraia Martins de Carvalho, FTC

Master's Degree in Food and Nutrition from the Federal University of Paraná / PR. Specialist in Health Education and Work Management in Multiprofessional Residency in Collective Health format, 2,880h (2010-2011). Specialist in Family Health in Multiprofessional Residency format, with title of Sanitarista, 5.550h (2008-2010). Graduated in Nutrition from the State University of Bahia (2002-2007). Currently, he is accompanying the actions of Food and Nutrition in Primary Care of the municipality of Senhor do Bonfim-BA and works as a teacher in the Nutrition and Nursing courses of the Faculty of Technology and Science - FTC.
