This study examines health surveillance practices in bars, restaurants, and cafés in Brazil during efforts to combat tuberculosis in the 1920s and 1930s. The aim is to understand how these spaces were treated as contamination hotspots and how food service workers, especially waiters and cooks, became targets of stigmatization and social control. The research draws on reports from periodicals of the time, highlighting discourses promoted by physicians and sanitary laws that reinforced inequalities and legitimized exclusionary practices, in line with Michel Foucault's concept of a normalization society. The analyses reveal that surveillance in these spaces not only disciplined these bodies but also exposed the interplay between public health, power, and the social stigmatization of tuberculosis patients during the period.
